Capital City Package Celebrates Summer With Cocktail Cupcakes

Capital City Package, an Atlanta wine store carrying a wide selection of beers and liquors, shares recipes with customers for cocktails and cupcakes.

 
The hot and humid summer months are a perfect time to enjoy an ice-cold brew, but baking a favorite beer into a cupcake might be even better. Capital City Package, an Atlanta beer store, carries many popular beers including Corona, Blue Moon, Guinness, Yuengling and brands local to Georgia, such as Sweetwater 420. Any of these beers can be paired with complimentary flavors – such as Corona and lime or Guinness and chocolate – to create delightful cocktail cupcakes.

Savory might not be a favored flavor for cupcakes, but the Cupcake Project created a delectable beer and cheddar cupcake topped with a bacon cheddar cream cheese frosting. For this trifecta of beer mates together in one cupcake you will need:
1 cup of your favorite beer
9 tablespoons of butter (1 stick + 1 additional tablespoon)
1 cup of grated good quality cheddar cheese
2 cups of dark brown sugar
¾ cup of sour cream
2 eggs
1 tablespoon of vanilla extract
2 cups of all-purpose flour
2 ½ teaspoons of baking soda

In a large saucepan, heat the beer and butter until the butter is melted. Stir often and do not boil the mixture. Once the butter is melted, add the cheddar until melted. Remove the saucepan from the heat and whisk in the sugar. In a bowl, whisk together the sour cream, eggs and vanilla extract. Mix the sour cream mixture with the cooled beer and cheese mixture. In a separate bowl, sift together the flour and baking soda. Fold the flour mixture into the liquid mixture, being careful not to over mix. Fill cupcake liners ¾ full and bake at 350 degrees for 20-25 minutes until the tops spring back when touched and a cake tester inserted comes out clean. To prepare the frosting, beat 8 ounces of room-temperature cream cheese with ¼ cup of room-temperature unsalted butter. Add ¾ cup of grated cheddar, and slowly sift in 4 cups powdered sugar. Finally, stir in 1 cup of chopped cooked bacon. Frost the cupcakes once they have fully cooled.
