Spain, February 21, 2013 -- Four and Michelin-starred chef Marcos Moran have opened “Hispania London”, a 950-square metre food outlet in the heart of the City of London completely devoted to Spanish cuisine. Moran says it is “the largest venue in Europe focusing entirely on Spanish food”. The initiative is being supported by the Spanish Chamber of Commerce in London.

The establishment in Lombard Street is set out on two storeys, with a tapas bar, a 40-seat restaurant, a gourmet store offering delicatessen products, cold meats and cheeses, a drinks bar and a room for hosting events.
This space is striking not only because of the quality of its food, but also for its decor. The ambiance is the work of leading Madrid antiquarian Lorenzo Castillo, known for his ability to create an air of exclusivity in any location. The project is expected to be a great success since it is also situated next to the third largest underground station in the United Kingdom.

Moran is proud to act as an ambassador for Spanish products and the Marca Espana overseas, and hopes this initiative will become a “display window for the world to see Spanish cuisine right now, at the time when it is at its very best”. This will be reflected in its tapas and cutting-edge cuisine, although there will also be traditional dishes such as fabada (butter bean stew) and arroz con leche (rice pudding). “We want to work with the Designations of Origin to bring the best of Spanish products to the second most important capital in the world”, he says.

However, the brains behind this new idea also recognise that this won’t be an easy task. “Spanish cuisine is famous all over the world and now you can’t just do any old thing. A few years ago you could, but now you really have to do things well, because many customers nowadays have travelled to Spain and they are more discerning”.
