EXTRACT MALT FROM BARLEY

Malting is the first and foremost process which includes steeping, germinating and drying of grain to convert it into malt. Various grains are used for malting, but the most common among them are barley, sorghum, wheat and rye.

Barley grains undergo a series of steps including malting that turn them into malted barley containing sugars. Malting

In this step brewing grains are soaked in water for some time to accelerate germination. However, just before the barley fully sprouts, it is heat dried and in most cases roasted or toasted to varying degrees to prevent the growth of barley seedlings.

Mashing

The name of the second step is mashing in which the crushed grains are mixed with water to form a porridge-like mixture called the “mash”, which is then cooked at precise temperatures to release the goodness from the barley grains and this goodness is primarily sugars, enzymes and proteins. Then a mashing process is designed to make the material as soluble as possible available in the wort, while avoiding undesirable characteristics, depending on how the barley is malted.

Extraction

Coming to the final step - extraction - is the step in which once the mashing has been completed the resulting liquid is further subjected to evaporation to reduce its mass and make it more concentrated. Although most extracts are liquid based, some malted barley powder manufacturers prepare dry extracts as well. This is done by taking a reduced mash and spray drying it into a powder.
