The Rainbow Way of Eating

scientists studying longevity wanted to find out what it is that sets the people of Okinawa apart, and what they found was a diet they called the rainbow diet.

 
The Okinawans' way of eating was called a rainbow diet because they choose to eat foods of as wide a variety of colors as possible. This has several benefits. Firstly, eating colored foods means a heavy emphasis on fruits and vegetables, and so this means less meat and highly concentrated starches and proteins are consumed, and the diet is therefore low in calories. They eat a lot of soy products, such as tofu, so much of their protein requirement is satisfied by soy rather than meats with high saturated fat content. They also obtain all their nutritional requirements from their food instead of popping pills.

Almost all the health problems affecting westerners are the result of poor nutrition and a diet overload with sugars, starches and fats, with little fiber, and nutrients obtained from a bottle instead of from food. Americans have the most expensive urine in the world.

Why is a rainbow diet so good? The colors in fruits and vegetables are produced by pigments such as the carotenes (like beta-carotene, which gives carrots their characteristic color), and these are antioxidants, which break down damaging free radicals. Colored foods are also packed with vitamins and minerals, which everyone needs for good health.
