Now, this can be near impossible with kids, but you can always try making them appreciate the fiber, vitamins and antioxidants found in green veggies. Rest assured that the time will come when they realize that feeding them vegetables, in general, is but among the many ways you show your love for them.
Luckily, at hand are many ways towards incorporating them into mealtimes without always being in the form of a cold dish or salad. Ranging from being an appetizer to a dessert, there are healthy recipes that prove how easy it is staying green with all your meals. These natural foods can even be great to pack when on travel, depending on the recipes you choose.
Breakfast
Taking the time to check food blogs, you will surely discover various ways to enjoy green dining at breakfast. You can have a fantastic frittata, scrambled greens, pancakes, vegetable omelette, casseroles, and no-fruit smoothies. An example is the recipe below that only requires five minutes to prepare and for two people to enjoy. Ingredients are:
1 chopped GMO-free cucumber
½ cup parsley
1 peeled lemon
1 peeled and pitted avocado
4 cups green, uncooked spinach
2 cups coconut water
12 pieces of cubed ice


Soups, entrees and snacks
Under this category, you can use green vegetables in cooking rice meals, paneer, burgers, sandwiches, wraps, falafel, salsa, zucchini noodles, and pasta. As a sample sandwich recipe, here is one having no anchovy or dressing. In its place are fresh vegetables set between slices of avocado, whole wheat bread, cucumber and leaves of cilantro and watercress. For two people, you will need the following:
4 slices of toasted whole wheat bread
1 sliced medium avocado, peeled and pitted
1 sliced medium cucumber
4 palm hearts cut lengthwise
12 watercress greens
20 leaves of cilantro
Salt and pepper to taste

Green vegetables can also be used in making cakes, brownies, muffins, parfaits, cookies and popsicles. The sample pop recipe below requires you to have a mold for popsicles to blend peas and yogurt with fresh peppermint leaves. You can then add chocolate flakes to create this frozen treat requiring only 12 minutes to prepare and five hours to freeze for a dozen people to enjoy. Made with simply four fixings, it has a concealed vegetable within that nobody sees, but adds nutrients into the dessert. These ingredients are:
3 cups nondairy vanilla yogurt
1 cup chilled peas
1/2 cup loosely filled fresh peppermint leaves
¼ cup tiny chocolate flakes
Directions:
Put the peas, yogurt and peppermint in a food processor and process well. Add some chocolate flakes to every pops mold. Pour a little mixture into every mold and add extra chocolate flakes. Continue alternating the chocolate flakes and peppermint mixture until the pop molds are filled. After five hours, remove the ice-covered pops and serve.
