Meat glue, also known as transglutaminase (TG), is an enzyme that has the ability to permanently bind proteins through the formation of covalent bonds. TG forms cross-linked, insoluble, and irreversible protein polymers and is sold with the brand name Activa. Stable polymers of meat glue is found in blood clots, human skin, and hair.

Bacteria is cultivated using the blood plasma from cows and pigs to make transglutaminase. Some TG is made from cultivating bacteria using vegetable and plant extracts. Most TGs are mixed with other ingredients, including gelatin and caseinate (milk derivative).

Meat glue is widely used for beef and pork restructuring, especially in food items that are high in protein and low in fat. Transglutaminase can be mixed with water or can be used dry and extensively suitable for products that contain ingredients such as transglutaminase, maltodextrin, and skim milk powder. This is the most preferred component for bonding meats, as a certain type of meat glue called GS can set on the meat without deactivating. This type of meat glue contains sodium chloride, gelatin, trisodium phosphate, maltodextrin, transglutaminase, and safflower oil, and thus serves as an essential ingredient in meat binding.
