4) Add them along with curry leaves to the pan. Let the cooking go on for 10 to 15 minutes.
5) Before crumbling the stock cube, tip in the chickpeas (and their juice).
6) Pour in 1 tin’s worth of hot water and the tomatoes.

8) Finally, add the coconut milk along with spinach to the frying pan and stir well.
9) Taste it and season the dish to perfection, then cut/ spread the coriander leaves over the top. The deliciously cooked food is now ready to be served with brown basmati rice.
