Arabica and robusta are the two major kinds of beans for all coffee. Robusta beans are slightly expensive and easier to grow. Arabica beans manage to make better coffee. Roasting is what turns green beans into coffee that is prepared to grind and brew. The variety of roast is usually listed on the label--you may have to experiment before seeing the one you prefer. And distinct brands may characterize their roasts differently. Here are the kinds of coffee to consider.

Light Roast

Light roasting creates beans that are light brown and have an additional sour taste.

Medium Roast

Medium roast coffees have medium brown beans. The beans do not have an oily texture in this roast. The coffee beans can have a radiant acidity, but detailed varietal aromatics (e.g. flowery, fruity, vegetable, berry, etc.) of the coffee are still apparent.

Dark Roast

The beans in this roast have some oil on the exterior and the color is rich and darker. The traits of the coffee are completed by caramelization notes such as nutty, bread or baked goods, or chocolate, and the acidity has vanished somewhat, bringing out a narrowly bittersweet aftertaste. French roast is a fine example.

Darker Roasts

The shadiest roasts have glossy black beans with an oily surface. In a good/well-done dark roast, there is still some good acidity to liven the cup. Dark roasts run the gamut from narrowly dark to exceptionally char. Italian and French roasts are darker roasts.

When we test coffee at Java sunrise coffee, we glance for smoothness and complexity with no off-flavors. The beans should be neither under-roasted nor charred, and the brew should have at least a middle aroma and flavor, and slight top notes. Some sourness and bitterness are alluring, too, to keep the coffee from tasting bland.
