After the chickpeas have been soaked, the soaking liquid should be discarded and the beans should be rinsed many times in fresh water.
Historically, the chickpeas' dark colour has been achieved by mixing in dried amla, also called Indian gooseberry.
Amla, furthermore, gives the stock a little sourness that complements the other ingredients. If you do not have any dried amla on hand, one black tea bag may be used in its place. If you don't like the darker colour, you may cook the chickpeas in only salt and water, or you can use canned chickpeas that have been drained.
Put chickpeas with two or three dried gooseberry pieces or one black tea bag in a three-liter stovetop pressure cooker. Use between two and three glasses of water.
Just a pinch of salt will do. Shake the bottle like crazy.
Pressure cooking chickpeas for 12 to 15 whistles over a medium flame is recommended. If you've cooked the chickpeas long enough, they should be soft enough to mash with a spoon.
If you don't have a pressure cooker, you may also prepare the chickpeas by cooking them in a large pot of water over low heat. One to two hours may be needed to prepare the chickpeas using the pan on the stovetop, but this may vary according on the chickpeas' quality and freshness.
