Prepare Amaranth seeds Like Rice or Quinoa
One way to consume amaranth is by preparing it like rice or quinoa. Begin by thoroughly rinsing 1 cup of amaranth under cold running water. Next, take 2 cups of water or broth you have prepared and bring it to a boil in a pan, then add in the amaranth and let the pot simmer. After all of that, let your covered pot soak for approximately 20minutes, or until there is no liquid left. This will leave it having a smooth, polenta-like consistency that can accompany a meal or be used as a salad bowl or bowl base.
Make Amaranth Porridge
Amaranth is not only healthy but it also makes a tasty breakfast warm porridge. For the easier version, boil a half cup of amaranth with one cup of milk or water and let it precook for about fifteen minutes. If you want, you can add sweetening substances such as honey or maple syrup, and enhance your dish with fruits, nuts or seeds to add some lovely texture.
