By controlling the harvest, processing, and final handling, Matt’s Catch guarantees the top quality of each and every fish and dish served. I handpick and personally oversee the care of each and every fish that we serve our customers. To preserve flavor, texture, and presentation we take great care to place each fish by hand into a chilled, sanitized hatch prior to processing-each and every fish. Chilling with ice provides the benefit of improving quality of the meat as well as locking in moisture, ensuring the finest possible texture.
Since the fish never leaves our custody, we guarantee the follow-through of every quality control measure, assuring the top shelf quality of our (Matt’s) catch and each and every dish served.
