What is Malted Barley?

To clarify you about the concept of barley, it is a type of cereal grain, similar to wheat, corn, rye, rice etc. So basically, whatever type of grain you will use in the process of malting, it will become that type of malted grain. For example, using corn in the process of malting will make it malted corn (the term malted is used here because of the process that the grain goes through is known as malting.)

What is Malting?

Malting is the process involving the sprouting (also known as germination) of grain in moist air, under controlled environmental conditions. In malting, the malt is generally dried to produce a shelf-stable product with an objective to modify the grain structure and composition.

The brewing process involves three stages: Steeping, Germinating, and Kilning.

Steeping

The first and the most crucial step of malting is steeping in which the grain kernel is cleaned and brought to life with water and oxygen. This is done by immersing the grain in water, followed by an air rest period that allows the water content of the grain to increase.

The concept of steeping is very much like how you water a seed to let it grow and is necessary to provide hydration to the barley seed to start the growing process.This program usually lasts for 2 days, where the moisture content is raised to an average level of 45 percent.

Germinating

Second necessary step involved in the process of malting is Germination which is necessary to unlock the sugars, protein, and starches found in the seed and is vital for your yeast during fermentation too.

In this step, the seed starts to grow, and all the sugars, protein, and starch are released.

Kilning

The final step in malting is known as Kilning in which the barley seeds are dried or heated to a temperature between around 55 and 100 degrees Celsius. Kilning is vital because of its impact on the colour and flavour of the barley and it even stops the seed from growing into a plant.

You can classify barley in three different ways: two-row, six-row, winter two-row, and six-row.

Two-row

The first one is two rows which produces an average of 25 to 30 grains and comes in two rows of kernels. They are also larger in size and present a more uniform appearance when compared to six-row barley. Not only this it also produces less protein content but higher flavour malt extract.

Six-row

Different from two-row barley produces an average of 25 to 60 grains and has more rows of kernels, as the name implies. They are comparatively much thinner in size and present a less uniform appearance. Another benefit it provides is that it has a lower extract but higher enzyme content, proteins, and beer colouring.

Winter two-row and six-row

This type of shape produces higher yields along with higher extract content and better malt modification.
