Looking for low calorie and high protein meat? Then why not “Bresaola”- the famous Italian cuisine. It is a grilled meat dried by air.

The concept of bresaola came from the local farmers who used to preserve the meat of animals. With the advancement of handicraft meat processing, it became popular and today it ranks best among the Italian dishes.

The Latin word “brasaula” is the origin of the word “bresaola”. I t is synonymous to salted, grilled meat. It is one of the most well known product of the Valtellina region of northern Italy but widespread all over the world.

A single muscle of beef corresponds to one bresaola. The process of drying bresaola is exactly same as that of salami. Since the meat is dried in air the outer surface takes a hard texture quickly retaining the moisture inside the inner core. The drying process varies from one to three months depending upon the size of the meat. During this process, it loses half of its weight thus resulting in low fat to human diet.

After the entire process of curing, bresaola meat attains soft reddish purple color texture. It is mainly preferred as an appetizer and served simply with a squeeze of lemon juice or olive oil or cracked black pepper at room temperature. Sometimes it is often served with porcini mushrooms or parmesan cheese. People suggest eating it fresh but if one wishes to store it then the wrapped bresaola are stored in refrigerator.
