Recipe Of The Week! Spanish Paprika Omelette

Spanish Paprika Omelette

• Quick
• Makes several meals


I used to cook heaps of omelettes years ago, but fell out of the habit…

A recent trip to Barcelona got me back into the groove of ‘em so this is something I was inspired to cook up!

Everything you’re going to need for this:

- 6 free range eggs
- 500g baby potatoes (finely sliced)
- 1 onion (finely sliced)
- Olive oil
- Garlic (cloves or granules)
- 1 tbspoon paprika

Simple steps to follow:

1. Place your finely sliced potatoes into some boiling salt water for 5 minutes, then drain them off and place to one side

2. In a medium sized frying pan, fry the onions in a little olive oil until they’re soft and then add in the potatoes, paprika and garlic for another several minutes.

3. Whist the eggs up in a bowl and then pour them into your frying pan. Try to the cover the potatoes and even them out best you can before the egg begins to set.

4. Allow to cook for several minutes and then either pop under the grill for a further 5 minutes or into the oven until the omelette has set.

Really is as easy and as simple as that…

Serve it up with some a whole heap of salad to get those greens in and this high protein recipe should last you for a good couple of meals - that's tonight’s dinner and tomorrow’s lunch sorted right!?
