Ingredients:
1 cup thick poha (flattened rice)
1 tbsp oil
1 tsp mustard seeds
1-2 green chilies, chopped
1 medium-sized onion, finely chopped
8-10 curry leaves
Salt to taste
A pinch of sugar (optional)
Fresh coriander leaves, finely chopped (for garnish)
Lemon wedge (optional)
Instructions:
Prepare the Poha:
Take the poha in a colander and rinse under running water. Be gentle so it doesn't break.
Let it soak for a minute, then drain thoroughly. Let it sit to absorb the moisture. Sprinkle a little salt and a pinch of sugar, mix, and set aside.
Heat the Oil:
