Here’s a simple recipe to make a flavorful, plain white poha at home:

Ingredients:
1 cup thick poha (flattened rice)
1 tbsp oil
1 tsp mustard seeds
1-2 green chilies, chopped
1 medium-sized onion, finely chopped
8-10 curry leaves
Salt to taste
A pinch of sugar (optional)
Fresh coriander leaves, finely chopped (for garnish)
Lemon wedge (optional)

Instructions:
Prepare the Poha:
Take the poha in a colander and rinse under running water. Be gentle so it doesn't break.
Let it soak for a minute, then drain thoroughly. Let it sit to absorb the moisture. Sprinkle a little salt and a pinch of sugar, mix, and set aside.

Heat the Oil:
Heat 1 tablespoon of oil on medium heat in a pan. Add mustard seeds and let them splutter.

Sauté the Aromatics:
Add chopped green chilies, curry leaves, and onions to the pan. Sauté until the onions become translucent.

Add Poha:
Once the onions are cooked, add the soaked poha to the pan. Mix everything gently so the poha doesn’t become mushy. Check the salt level and adjust if needed.

Steam the Poha:
Cover the pan with a lid and let the poha cook on low heat for 2-3 minutes. This will help absorb the flavors.

Garnish and Serve:
Turn off the heat and add fresh coriander leaves. Squeeze a little lemon juice for added flavor (optional).
Serve hot, and enjoy your plain white poha!
