He inspects the equipment, utensils and food supplies to ensure the separation of dairy and meat products. As a Mashgiach, he also makes it sure that the kosher food supplies are kept separate from non kosher foods. He needs to wash and salt meat fowl in accordance with Hebrew ritual. He directs the kitchen staff in methods of complying with dietary laws. Overall, the role of a Mashgiach is to ensure that the food is kosher and will remain so. A Mashgiach is the one with impeccable moral and ethical standing in the community. He is usually paid by the restaurants and thus he needs to hold himself to the highest standards of honesty.
