Valentine's Day can throw the best of us into a wild panic. How do you show the person you love the way you feel without compromising cliches? You know what I mean, reserving a table for a set steak dinner with a side of heavy breathing couples at a romantic restaurant or buying a bunch of roses on the way home. It's always good, but never original.

In my view, it's better to avoid both. What everyone needs is to feel like they're being considered or looked after. For me, because it's a simple act of love, making something for someone does just that. It doesn't need to be a blazing pudding or a croquembouche high in the Eiffel Tower, just something special. After dinner and with a little dessert wine, they are perfectly eaten or just slowly nibbled all by themselves. The best combination of fudge and soft caramel is Chai-spiced chocolate truffles. These bite-sized delicacies, rich and decadent with dark chocolate and deeply fragrant from the sharp notes of warm spices, are fabulous for gifting. The epitome of minimal effort and full reward treats is truffles. You can play around with flavours with 2 simple ingredients to create endless variations.

With a bouquet of flavours and fragrance, the mouthful of sharp cardamon, fiery ginger, bossy garlic, bold pepper, and piquant cinnamon fully animate the truffles.
I sprinkled the chai masala with a few dried rose petals to make the chocolate truffles extra special. But that's an optional move altogether. All on their own, the truffles will remain bites of fudgy wonder.
I tried them with exquisite lavender and boozy Baileys. But I decided to make them extra special since Diwali is in the air. So, to steep the truffles with a rich, warming aroma and earthiness, I used my homemade chai spice.
