The soybean is a leguminous plant native to the Asian continent and mostly eastern Asia. The plant is an important food in the world and produced mainly in Asia, south and north Americas.

The most common form of consumption is the processed soya. In Asia it is still consumed as whole grain meal.

Nutritional Values

The beans contain anti oxidants as well as phytonutrients with various health benefits. In one hundred grams sample, it will contain approximately 173 calories, 16.6 grams of proteins, 10 grams of carbohydrates and up to 9 grams of various types of fats. It also contains sugars and fibers, which are important for the body. The soy as a protein source is therefore very good though slightly lower than animal proteins.

The protein type available is the glycinin and conglycinin. Research has shown that some people may be allergic to these proteins. The regular intake of these soy proteins has been shown to cause decrease in the level of cholesterol in the body.

Lecithin

This is a term used to describe yellow/brown fatty substances in animal and plant tissues. They are classified as phospholipids comprising phosphoric acids, choline, glycerol, and other fatty acids.

These fats are very essential in the body cells. They occur in many foods including soybeans. In the medical and health industry, lecithin is used in treating of memory disorders such as dementia Alzheimer’s disease, gall bladder and liver disease as well as certain types of depression. It is also used in treatment of skin disease called eczema.

The lecithin is also used as food additive that is important in maintenance some food elements from separating out during preparation. In eye medications, it is important in keeping medicine in contact with the eye cornea. In operation, the lecithin is converted in the body to acetylcholine, which is responsible for transmission of nervous impulses.

Lecithin Powder

This is an emulsifier primarily extracted from the soybeans, but may also be available in other plants such as the sunflower. Due to its ability to combine the lipids and non-lipids, it is used in combining food ingredients of this nature. In baking, it is important in keeping the foods from sticking to the pan. The powder is also used in stabilizing frothy and foamy dishes such as meringue and whipped cream. The soya lecithin powder also adds a nutty flavor to food. It is used in chocolate and production of confectioneries, especially in the water/oil emulsions, making of fat spreads and frozen dough’s.

Soya Flour

This flour is made from grinding and crushing roasted soybeans into a fine powder. It is a recognized health food and used as a supplement to wheat flour to provide important proteins. It can also be used as a coarse powder and a thickener in gravies and sauces. It also adds to the tenderness of the baked foods. It has also been noted that soya flour causes browning more quickly.
