Freeze drying is one of the methods of food preservation through sublimation where water molecules are dried and turned into vapors. The food texture is affected, but nutritional value, color and taste stay the same.

 
Frozen dried food is light and is therefore suitable for traveling and storing in emergency preparedness kit. These foods also have a longer shelf life and stay intact for longer periods of time, making them suitable for consumption.

The crunchy texture that dehydration leaves, makes it a good snack and instantly tasty, for example frozen peas and banana chips. Easy and readily cooked, freeze dried foods just require adding of hot water and you are good to go.Like many foods, vegetables also go through the process of freeze drying and bring along many health benefits with its consumption.

RICH IN FIBRE: Dried vegetables are rich in dietary fibers that help speed up bowel movements and clean the intestinal tract. Dried or not, vegetables are rich in carbohydrates and therefore are a good source of energy, especially for athletes and people who are physically active.

NUTRIENTS: Most vegetables retain their nutritional qualitieswhen dried. Vitamins A and C are still present though further blanchingreduces the juice,although some of these are frozen right after harvest, thus freezing the nutrients with them. This makes them better than fresh vegetables, which are transported over long distances and lose their freshness in the process.

GOOD REPLACEMENT FOR JUNK FOODS: The drying process makes the food’s textures crunchy, which is great to munch on when bored or hungry. Instead of eating junk food, you may as well make a habit out of chomping dried vegetables, which are brittle and crispy in nature and you have a variety of options to choose from, like peas, corn and celery, while replacing the unhealthy effects of junk food with healthy vegetables.

ANTIOXIDANTS: Solidifying vegetables concentrates their antioxidant content. They help fight basal damage the body can become prey to from various environmental and unhealthy food effects. Consuming vegetables, or any other food, rich in antioxidants helpsyou fight off serious diseases, including heart failure and cancer.

This isn’t exactly a health benefit but if you are allergic to the pungent, tear-dripping smell of onions and hence dread chopping them, you have a way out. Buying freeze dried onions are already dehydrated and even chopped which means you don’t have to shed those precious tears and can even avoid onion smell-allergies.
